Fit first, looks second. Most trays rest on a seat near the top of the stem, and the center-hole diameter has to match — a wobbling tray with hot coals on it is a problem you only tolerate once. Material matters too: stainless and brass handle heat and wipe clean; painted finishes prefer coals kept on the outer ring.
